A friend is looking for a broccoli, cheese, and rice casserole recipe to make for Thanksgiving. I told her I'd share mine when I got home from work. Since I was going to type it up anyway, I thought I'd go ahead and share it here in case anyone else would like to have it, too!

2 packages frozen broccoli florets
1 cup uncooked Minute Rice
1 can cream of chicken soup
1 onion, chopped
2 tablespoons butter
1 cup shredded cheddar cheese
1/2 cup milk
Cook broccoli as directed; drain. Saute' onion in butter. Mix all ingredients together and spread in casserole dish that has been sprayed with pan spray. Bake 35 minutes at 350 degrees.

If I wanted to make that and had no recipe, I would make a casserole that left out the chicken. Tommy hates cheese on his rice and chicken, so I have to stir cheese into what I put on my plate. booo to that. Last time, I made two small casseroles, one for each of us. That looks good. I may make that myself since I just bought fresh broccoli.
ReplyDeleteIt is good, Linda! If you end up trying it, let me know. I'd love to hear your opinion. Sometimes, instead of two packages of broccoli, I only use one package of broccoli and one of cauliflower. That's good, too! Have a Happy Thanksgiving!
