Good morning, Dear One! Happy First Monday of 2022! 🎉
I hope that you and yours had a great last week of 2021 and are off and running in a Happy New Year!
I saw this idea online and it seems to
work pretty well. After I get the Van Gogh
room closet cleaned out, I plan to hang
this bag of wrapping paper in there.
For those that don't know and are wondering...the Van Gogh room is my office. It is also my craft-supply and program-materials-for-work room. In addition to all of that, over the past year, it has become the catch-all room for anything and everything, as well as serving as a guest bedroom. One of my goals over the winter is to pull absolutely everything out of that room, clean, organize, and purge before putting anything back. We'll see!
New Year's Eve was spent at Patrick and Amber's. We enjoyed pizza, chips, and a vegetable tray for supper and rang in the New Year with poppers, noise makers, and blow horns. It was a lot of fun! 🥳
New Year's Day was spent at home. The weather turned off bitterly cold and we got a bit of ice and snow before it was over. It was a great day to stay in and snuggle down. I watched the whole of Dicken's Little Dorrit (8 hours) and worked on data entry. I also enjoyed watching a variety of birds at the feeders outside the back porch window.
Birds At The Feeders on New Year's Day
Sunday was quiet...church in the morning, then a drive through the park after lunch. I settled down to watching David Copperfield in the evening (Charles Dickens...not the magician!) while piddling around the house with a variety of projects.
.
Now, here we are! It's Monday and we're embarking on a brand new week. Let's get started with this week's post, shall we?
This week's master to-do list...
- work
- clean house
- do laundry
- figure January budget and bills
- go to the bank
- pay bills
- celebrate grandson, Silas's, 14th birthday
- shop for perishable grocery items
- get a tire fixed
This week's menu plan...
After taking an inventory of in-house food last week, this week's supper menus, as well as supper menus throughout the entire month of January, will feature leftover meals and meal components from the freezer...soups, stews, meats, and breads.
I roasted a turkey in the oven overnight last night. After it cools, I plan to slice, cube, package, and refreeze it to be used in further meals along the way. I will freeze the broth in 2-cup quantities, as well.
For lunches, I have decided to take the 21-Day Salad Challenge that is going around on the internet right now. It's a great way to cut calories and get more fruits and vegetables into the diet. My aunt is joining me in this endeavor. We officially started January 1st and, looking beyond the next three weeks, hope to make it a lifelong habit. Is anyone else here taking the challenge?
Monday - Out
Tuesday - Oven-roasted turkey breast with mashed potatoes and oven-roasted carrots
Wednesday - Wintery Day Bean Soup with toasted Ezekiel bread
Thursday - Chili with crackers
Friday - Spaghetti squash with sauce, Italian sausage, and homemade French bread
Saturday - Chicken and Wild Rice Soup (will use turkey instead of chicken) with toasted Ezekiel bread
Sunday - Leftovers
Well...that's it for today! You have a nice day and a wonderful week ahead and I'll be with you again soon!
Until next time...
~Rebecca

Love the bird photos and the expression on that cat's face is something. Your menu this week sounds wonderful. Like the idea of the salad challenge but probably not something I'd be able stick with myself. Hope you have a wonderful first week of the new year!
