Master To-Do List and Menu Plan Monday - December 27, 2021

Good morning and Happy Monday...the last Monday of 2021!  ðŸŽ‰  

How was your week and weekend? I trust that you and yours had a lovely Christmas!

I had a nice one here. It was hard, being as it was the first one without my husband, but I made it and it's behind me now. My children were very attentive and did their best to make sure that I didn't spend the holiday season alone. 

We had Family Christmas on the 16th. That was the only day that Amanda and Aaron both had off work and could make it down, so we scheduled the family get-together then. All but one of the children and their families made it that evening and we such a good time! It was very enjoyable and I loved having everyone here for a fun occasion (as opposed to a sad one). It was wonderful!

The following evening I was invited to Rudy and Angie's for supper (fried chicken, baked potato, and salad...it was delicious!). I worked on Saturday, then, afterwards, went with Patrick and Amber and Tony and Nicole and the grands to see the 'Way of Salvation' light display in Carthage. With over a million lights displayed along a half-mile drive it was absolutely stunning!

Last week fairly flew by and I never did get time to sit down and make a post. I baked dozens of molasses cookies on Monday and delivered them to neighbors and extended family members that evening. 



On Tuesday I had friends over for supper and on Wednesday I visited granddaughter, Sarah, along with daughter-in-law, Christy, and the other children, for Sarah's birthday. That afternoon my friend, Carla, came over and we did our Christmas together. 

I worked on Thursday. That evening Amber and I got in an unexpected and impromptu get-together with Amanda, her mother-in-law, Lisa, and granddaughter, Alysia, when they ended up meeting and picking up granddaughter, Kayla, at Nevada. The six of us ended up having supper together at Freddie's, then Amber and I went to the store and looking at Christmas lights on the way home.

It was good to get another unexpected visit in with Amanda and the girls before Christmas and I don't know when Amber and I have had an outing together...just the two of us...if ever!!! It was fun! Oh! And on the way to Nevada we dropped something off at Buddy and Christy's and got to see Christy and the grands there again before Christmas, too. It was nice! 

Friday was Christmas Eve. Rudy and Angie came to visit in the afternoon and Patrick and Amber and their family and Tony and Nicole and theirs joined me that evening for the traditional Christmas Eve lasagna. It was hard after everyone left, but, hey! I made it!!!

I had lots of invitations for Christmas Day...Rudy and Angie invited to come eat with them, Amanda wanted me to come to her house in Kansas City, Patrick and Amber invited me to ride up home with them, where Amanda could pick me up if she wanted to, Buddy and Christy invited me to their house, a friend in Carthage invited me to hers, a friend here in Liberal invited me to hers...I had LOTS of invitations...but, the truth is, I didn't really feel like being around anybody. 

Tony and Nicole and the grands did drop over for a short time in the early afternoon. After they left I went out to the park and enjoyed observing the bison herd and taking pictures from the safety of my car. For me, it was a great way to spend Christmas afternoon. If John were here, we, most likely, would have done exactly the same thing. We so loved going out to the park and watching the bison together.






Now...here it is...Monday morning and the last week of 2021.To be honest, I'm happy to see it go and I pray that 2022 proves to be an outstanding year by far in comparison.

This week's master to-do list...

- finish up current data entry project at work
- clean house
- do laundry
- wash bedding
- take an inventory of food on-hand
- gather and deliver a box of canned and boxed items to donate
- plan January's menus based on food inventory
- go over year-end finances
- make a financial plan for 2022
- order vitamin and supplement stock
- take down, organize, and put away Christmas decorations
- celebrate the New Year
- work 'First Day Saunter' on New Year's Day at the park


This week's menu plan...

Monday - Turkey burger with oven fries and salad
Tuesday - White Chicken Enchiladas and black beans with salad
Wednesday - Breakfast sausage patty and fried potato with sautéed green pepper and onion
Thursday - Grilled salmon, baked potato, and salad
Friday - Homemade pepperoni pizza with salad
Saturday - Split pea soup and Ezekiel bread
Sunday - Leftovers

  1. You've been on my mind a lot during the holiday times. Glad you made it through. Those bison pictures are amazing. Hope you have a good last week of the year and yes, a much MUCH better 2022!

    1. Thank you, Jean! I appreciate your thoughts. It's been a good week...busy taking down Christmas stuff and just trying to figure out what's next. I'm hoping for a much better 2022, too! We're supposed to be getting ice and snow tomorrow. In fact, my boss just cancelled the First Day Hike, so I don't have to work tomorrow. Will still probably head out to see if I can find a frosty-backed bison somewhere. LOL! Have a great rest of the day and HAPPY NEW YEAR!!!
