Recipe - Pineapple Upside-Down Cake

My husband's dad first introduced me to pineapple upside-down cake when I was just a kid. It was his favorite cake and it's one of mine, too! I decided to make one last night and thought I'd share the recipe with you here today. 



PINEAPPLE UPSIDE-DOWN CAKE

1/4 cup butter
2/3 cup packed brown sugar
9 pineapple rings (drained) (or, as you can see, I used pineapple tidbits instead - 1 20 oz. can drained)
1 1/3 cups flour
1 cup sugar 
1/3 cup oil 
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1 egg

Heat oven to 350 degrees. In a 9-inch square pan, melt butter in oven. Sprinkle brown sugar evenly over melted butter. Arrange pineapple tidbits over brown sugar.

In a medium bowl, beat remaining ingredients with electric mixer on low for 30 seconds, scraping bowl constantly. Beat on high speed for 3 minutes, scraping bowl occasionally. Pour batter over pineapple tidbits.

Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. If desired, immediately place heatproof serving plate upside down over pan; turn plate and pan over. Leave pan over cake a few minutes so brown sugar mixture can drizzle over cake; remove pan. Serve warm. Store cake loosely covered.

  1. I love pineapple upside down cake. But I make mine with the pineapple rings and the maraschino cherries. YUm!

    1. I usually do the rings if I have them, but, if not, I just use whatever I've got on hand. Have never done the maraschino cherries. Will have to try that! Hope your week is going well. Blessings!

  2. My mother made pineapple upside down cake, and we loved it. She used pineapple rings but no cherries.

    1. That's how my mom made it, too...rings, but no cherries. I will have to try the cherries sometime.

    1. Ahhhh! I forgot about that. I don't remember pineapple upside-down cake, specifically, but, yes, my mom used to bake things a lot of things in a cast-iron skillet, too. I remember cinnamon rolls. Yum!

  4. My dad loved pineapple upside down cake as well. He always had one on his birthday. Might have to make one just because one day soon.

  5. I love pineapple upside down cake! I haven't made one in a long time, so I may have to, I also add cherries to mine. It is also my dad's favorite cake.

    1. I've never had it with the cherries, but will have to try it. I really like maraschino cherries, so would probably enjoy the addition. That's neat that it's your dad's favorite, as well. Thanks for stopping by. I hope your week is going well. <3
