Master List and Menu Plan Monday - August 2, 2021

Good morning, Dear One! It's Monday! 💗

Not only is it Monday, but it's the first Monday of August! I'm so glad that July is finally behind us and I pray that August proves to be a somewhat brighter month by comparison! 🌞

How was your week and weekend? All things considered, my week turned out to be not too bad, but it has been long, as well as, lonely and sad at times.

I visited the new Dollar General store, for the first time, on Monday and, I think every day since, except Sunday. 😏

It was great having it so close by when I ran out of pertinent ingredients in the middle of making a recipe and I love their new app and coupon savings! Having the new store so close at hand is going to save the people of our little town a lot of time and money. It is forty minutes to two hours round trip to the nearest towns. Then, when you figure in the cost of impulse buying when shopping in the bigger towns, eating out, and gas money involved...well...it has the potential of adding up to REALLY big savings! Personally, I think it's great!!!

I managed to get thank-you notes written out to family and friends this week. There has been so much love expressed our way over this past six months, and so many acts of kindness committed, that I truly doubt that I got everyone covered, but I did get the ones that I remembered and were written down. Whether I actually wrote something out or not, I truly appreciate every single act of love and kindness show to John and I and our family during this past six months...during the time of his time of illness and subsequent death. It has meant a lot.

Well, I'm running late this morning, so I'm going to go ahead and get on with today's post. Let's get started...shall we?

This week's menu plan...

I've done pretty good about using up the fresh stuff I had on hand. I've thrown out what had gone bad (which really wasn't much), put what I could in the freezer, and planned meals around the rest. I still have a bag of sweet potatoes left that needs used, so that will be the common denominator in this week's meals.

Monday - Beef stew and biscuits
Tuesday - Broiled salmon, baked sweet potato, and sautéed spinach
Wednesday - Turkey burgers with sweet potato fries
Thursday - Oven roasted chicken breast, mashed sweet potato, and steamed broccoli
Friday - Taco spaghetti squash boat
Saturday - Out
Sunday - Leftovers

That's it for today! Have a beautiful Monday and a great week ahead!

Until next time...
~Rebecca

  3. I cannot imagine having to drive so far for groceries. For the last 40 years, I have lived within a mile of a grocery store and within 1/3 of a mile of a Dollar General. At one point, there were two large groceries stores, one within two blocks and the other within four blocks. The neighborhood grew up around them and then they were gone! I have been incredibly lucky with having available grocery stores so close. I even walked to the one two blocks from me.

    1. Believe me...I know. Before moving here from the Kansas City metropolitan area (25 years ago), I couldn't imagine it, either. To be honest, it was a big part of the culture shock that ensued after our arrival. Dollar General wasn't a thing back then, but, back home, we were within a couple minute's drive from a Walmart, multiple grocery stores, and every other kind of store imaginable. We could have everything we ever wanted and never leave town if we didn't want to. It was a hard adjustment, for sure, and it has gotten tiring having to travel so far for just about everything. This DG is already making a huge impact in time and savings for me and, I imagine, for just about everyone else in town, too. I'm so thankful!

But you have a strong and beautiful faith and I pray you let that hold you up during this time. As well as the support of your loved ones. May your treasured memories with John bring you so much comfort in the times ahead.
Happy birthdays to your family members with them. I hope you have a wonderful week ahead. xoxo
