Recipe: Almond Butter Cookies

Almond Butter Cookies

In cleaning out the fridge today I came across an open jar of almond butter. I didn't want it to go to waste, so I did a Google search on ways to use up almond butter. I got lots of ideas, but settled on cookies. I found a recipe that called for ingredients that I had on-hand, tweaked it a bit, and came up with two-and-a-half dozen of these soft and chewy almond butter cookies. I thought I'd share the recipe with you!

ALMOND BUTTER COOKIES

1 stick of butter
1/2 cup almond butter (I use Maranatha brand)
1/2 cup sugar
1/2 cup brown sugar (packed)
1 egg
1-1/4 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 teaspoon baking soda

Preheat oven to 375 degrees. In a large bowl cream together the butter, almond butter, sugar, and brown sugar. Beat in the egg and add the dry ingredients. Combine thoroughly. Roll into 1-inch balls and place on baking sheets. Press a whole almond into the center of each cookie. Bake for 10 minutes or until cookies begin to brown. Cool on a wire rack and enjoy!

    1. Same, Lisa! I thoroughly believe in using up what's on hand, not wasting, and being a good steward. We just got a Dollar General here in town (opened up Monday), but, before that, it was a 40-mile round-trip to town for just about anything.

    1. They are and, yes, I love anything almond (or walnut!), too! I'm doing okay. The thoughts and prayers are much appreciated. I am trying desperately to find my footing, but it's not easy. I can't seem to recover from one blow before another hits. We had John's Celebration of Life on Saturday; yesterday morning Dorothy passed away (my oldest, dearest, and closest girlfriend from childhood...we considered ourselves sisters). I'll sure be glad when this old world is behind us and we are standing in the presence of our Lord and Savior face-to-face and reunited with our loved ones that are in Him. Thanks for continuing to remember me. It is much appreciated. God bless you!
