Happy Homemaker Monday - April 30, 2018

Today I'm joining Sandra at Diary of a Stay at Home Mom
and all the sweet ladies of
Happy Homemaking Monday!
Good morning, Sweet Ladies! 💗

I trust that you all had a great week last week and are up and at 'em...ready to face this week's challenges head-on, because, ready or not, here we go! Happy Monday! 😊

Last week didn't go quite as planned. I ended up making violet jelly Monday evening (I will be sharing a post on that later) and didn't get to the dandelion at all. And, after a rough night Tuesday night, I didn't make it to the herceptin date (chemo treatment and lunch) with my friend, Laura, on Wednesday, which made me feel terrible, but, the truth is, I just couldn't. There was too much going on on the home front and it just wasn't possible.

Work fairly flew by this week. I couldn't believe it! Friday, Saturday, and my half-day Sunday were so busy that quitting time all three days took me by surprise. I'd look at the clock and it would be mid-afternoon. Then, all of a sudden, what seemed like moments later, it would be time to go home. This whole past week has just been a blur!

Okay...so enough about last week! Let's get on with this week...shall we??? 😊

Right now I am...

Finishing up breakfast and enjoying a cup of hot tea while I write this post.

On the breakfast plate...

Cottage cheese on toast and a cup of Twining's Irish Breakfast Tea

The weather...

Is beautiful! I think we're finally past the really chilly stuff and headed into temperatures more suited to springtime. Right now it's 55 degrees and the high today is supposed to be in the mid- to upper-70's.  In fact, everyday coming up is supposed to be between 75 and 80 degrees...which is PERFECT! Severe weather is expected mid-week.

On my reading pile...

At the moment, other than daily scripture reading, nothing. I finished both of the books that I was reading last week (Create the World You Want to See and The Shepherd of the Hills...which, by the way, is one of my favorite books of all time!!!) and have started and finished a mini book in the interim. I will take my review and test over Create the World You Want to See and my review over the mini book before moving on to anything new.

On the menu this week...

Monday - leftover bison burgers and oven fries
Tuesday - fresh spoonbill (a gift from a friend), baked sweet potatoes, and sauteed zucchini
Wednesday - turkey meatballs, troodles (zucchini noodles), sauce, and peas
Thursday - ham and beans (freezer) and cornbread
Friday - broiled salmon, baked sweet potatoes, and brussel sprouts
Saturday - homemade pizza (from the freezer)
Sunday - leftovers

On my 'to do' list...

- Monday - Drop my car off at the shop in Lamar to get new headlights installed, run errands with my daughter (who is picking me up at the auto shop) plan the week ahead, do my weekly "home blessing", laundry
- Tuesday - Celebrate May Day by sharing and planting flowers, get together with my friend, Carla
- Wednesday -  Work on my blog, work on jewelry, and list some things on Etsy
- Thursday - Work on my blog, work on jewelry, and list some things on Etsy
- Friday - Work
- Saturday - Work
- Sunday - Church; work

In the craft basket...

My daughter-in-law brought me some chicken feed bags, so have more shopping bags to make and I've started making jewelry. I also got my Etsy shop back up and running. Haven't listed a whole lot yet, but hope to work on it later this week.  Hopefully, I will be able to share more about that next week.

Looking forward to this week...

Getting the new headlights installed on my car which will enable me to see to drive after dark...which is a whole lot better than NOT being able to see to drive after dark...which is where I've been for a long time!!! 😲

From the camera...

Today marks the fifth anniversary of my Aunt Linda's
death. She loved purple irises and I can't see one
without thinking of her. They've not boomed like this
since the move (this pic was taken a few years ago at the
old place), but, in time, they will. Thinking of you today
and always, Aunt Linda. Love and miss you! 💜

Happy Homemaker Monday - April 23, 2018

Today I'm joining Sandra at Diary of a Stay at Home Mom
and all the sweet ladies of
Happy Homemaking Monday!
Greetings, Sweet Ladies!  Happy Monday! 💗

My daughter-in-law and I met for breakfast at Mary's Flower Cart Cafe this morning at 8:00 and ended up visiting there until almost lunch time! 😲 So, as you can see...I'm running a bit late with today's post.

I trust that you had a great week last week and that this week is off to an amazing start! Let's get started...shall we? 😊

Right now I am...

Finishing lunch, washing the bedding, picking things up and putting them away as I work on other things, and working on getting this post out.

On the breakfast plate...

Like I said...breakfast at Miss Mary's...bacon, eggs, a biscuit, and gravy...and it was soooo good! (Plus...it was my daughter-in-law's turn to buy...so that made it twice as yummy!) 😉

The weather...

Is gorgeous!!! Right now it's 70 degrees and the sun is shining. Yesterday we had rain, and that was the first Sunday in five weeks that we didn't get snow. There's no guarantee, of course, but, by the looks of the 10-day forecast, I think we've finally seen the last of winter here in southwest Missouri. 😌

On my reading pile...

In addition to daily Scripture reading, I'm reading Create the World You Want to See

by Kenneth W. Hagin and The Shepherd of the Hills by Harold Bell Wright.
On the menu this week...

Monday - oven-roasted chicken breasts with sauteed onions, peppers, and mushrooms
Tuesday - broiled salmon, baked sweet potatoes, and sauteed zucchini
Wednesday - turkey cutlets with Parmesan crust, baked potatoes, and frozen peas and carrots
Thursday - bison burgers and oven fries
Friday - broiled salmon, baked sweet potatoes, and brussel sprouts
Saturday - homemade pizza (from the freezer)
Sunday - leftovers

On my 'to do' list...

- Monday - Meet dil for breakfast, plan the week ahead, do my weekly "home blessing", laundry, wash bedding
- Tuesday - Go play in the sunshine
- Wednesday -  Go on a "hereptin date" with my friend, Laura (this is code for "a chemo treatment and lunch")
- Thursday - Collect violets and dandelions from the back yard and turn them into jelly; work up a couple more feed sack shopping bags
- Friday - Work
- Saturday - Work
- Sunday - Church; work

In the craft basket...

Feed sack shopping bags and working on some jewelry ideas

Looking forward to this week...

Getting out into nature and doing some hiking.

Happy Homemaker Monday - April 16, 2018

Today I'm joining Sandra at Diary of a Stay at Home Mom
and all the sweet ladies of
Happy Homemaking Monday!

Greetings, Sweet Ladies!  Happy Monday! 💗

I pray that this post finds each of you healthy, happy, and serving the Lord with gladness! How has your week and weekend been?

My week and weekend here was busier than usual. Monday and Tuesday were both spent on the run (shopping, doctor appointments, running errands, etc.). Then, normally, I work two to three days a week; this week I worked four in row. In addition to that, dh hasn't felt the best this past week, so he's not had the get-up and go to do the things that he normally would do, so, overall, it's been kind of a blah week all the way around.

I did manage to get a few little jobs done that needed doing Wednesday afternoon when I got home from work. I took my review and test in Rhema and got that mailed out, set an appointment to get new headlights installed on my car (which are very much needed!!!), and registered for spring training for work. Beyond that not a whole lot of anything else got done other than the basics that had to be done each day.

Because of school groups and year-end field trips, coupled with the fact that my early June start-date is quickly rolling around and I have to complete my allotted hours for the year, or lose them, AND spring training is thrown in there in the middle of everything (this year I get to go as a mentor, which is exciting!) April and May always turn out to be my busiest months of the year.

Anyway...so much for my rambling! (Sorry, Ladies!) 😆 Let's get started...shall we? 😊

Right now I am...

Finishing up breakfast and enjoying a cup of hot tea while I write this post.

On the breakfast plate...

Trim Healthy Mama pancakes topped with blueberries, Oikos Triple Zero Vanilla yogurt, and sugar-free syrup and a piping hot cup of Twining's Irish Breakfast tea

The weather...

At the moment the sun is shining, but it's only 36 degrees. We had snow again yesterday (that makes four snowy Sundays in a row) with a high in the mid-40's and it was extremely windy. Today is supposed to be better with a high in the upper-50's and the ten-day looks promising with highs in the 50's and 60's most days and lows in the mid-40's. This is turning out to be one of the coldest springs I can remember.

Skiffs of snow on my car and our
neighbor's roof early Sunday morning.
On my reading pile...

In addition to daily Scripture reading, I'm reading Create the World You Want to See

by Kenneth W. Hagin and The Shepherd of the Hills by Harold Bell Wright.
On the menu this week...

Monday - stuffed pepper casserole
Tuesday - salmon, sweet potatoes, green salad
Wednesday - turkey Italian sausage, roasted potatoes, green beans
Thursday - baked chicken, butter and garlic pasta, peas
Friday - salmon served on a bed of mixed greens and roasted potatoes
Saturday - homemade pizza
Sunday - leftovers

New recipe tried this week...

TURKEY CUTLETS WITH PARMESAN CRUST

  • 4 (4 oz) turkey breast cutlets
  • 2 egg whites, beaten
  • 1/3 cup seasoned breadcrumbs
  • 2 tbsp Parmesan cheese
  • kosher salt and fresh pepper
  • 1 tbsp butter
  • 1 tsp olive oil
  • lemon wedges for serving

Season cutlets with salt and pepper. Combine bread crumbs and Parmesan cheese in a medium bowl. In another bowl beat egg whites. Dip turkey cutlets in egg whites, then breadcrumb mixture, shaking off excess. Heat a large nonstick frying pan on medium heat. Add the butter and olive oil. When butter melts, add the cutlets and cook about 6 minutes on each side, until golden brown and cooked through. Serve with lemon wedges. Yield: 4 servings;196 calories each

On my 'to do' list...

- Monday - Plan the week ahead, do my weekly "home blessing", laundry
- Tuesday - Work (library programs - "The Legend of the Indian Paintbrush")
- Wednesday -  Work
- Thursday - Run errands
- Friday - Work
- Saturday - Work
- Sunday - Church

In the craft basket...

Nothing at the moment

Looking forward to this week...

Catching up with myself on Thursday and getting some more of those little things done that need doing wiped out.

From the camera...

It's not blooming yet (been too cold), but, since I'm
doing a couple of library programs on it this week,
I thought I'd share this picture of Indian Paintbrush
that I took a couple of years ago. It's so pretty! 💗

Happy Homemaker Monday - April 9, 2018

Today I'm joining Sandra at Diary of a Stay at Home Mom
and all the sweet ladies of
Happy Homemaking Monday!

Good evening, Sweet Ladies! 💗

As you can see, I'm getting a really late start on today's post. My husband and I had a lovely three night/four day stay in Branson, Missouri where we attended the 2018 Branson Victory Campaign at Faith Life Church.

While in Branson we visited a couple of nature centers and hiked several trails.

We also visited The Butterfly Palace! 🦋

One of the 2,000 free-flying butterflies within the
exhibit. What a beautiful and amazing experience!
We got home yesterday afternoon and, this morning, I had stuff to do in Lamar, so, technically, I'm just now getting started on my day here. As you can imagine, I'm beat, but I'm determined to get this post out before I move on to anything else. So, let's get started...shall we? 😊

Right now I am...

...sitting down with a nice cup of hot tea and a slice of homemade pizza while I try to settle myself down, collect my thoughts, and work on this post.

On the breakfast plate...

This morning I had cottage cheese on toast, two Cuties, and a steaming hot cup of Twining's Irish Breakfast tea.

The weather...

At the moment it is sunny and 54 degrees, but the clouds are moving in and there's a chance of rain. The past week has been all over the place...sunny and warm with temperatures near 70 degrees one day, then rain, ice and/or snow and temperatures below freezing the next. This up and down pattern is supposed to continue throughout the foreseeable future as far as anyone seems to be able to tell. 🌞☔⛄
On my reading pile...

In addition to daily Scripture reading, I'm still reading Following God's Plan For Your Life by Kenneth E. Hagin (am on the last chapter) and The Shepherd of the Hills by Harold Bell Wright.

 On the menu this week...

Monday -  homemade pizza
Tuesday - taco soup
Wednesday - turkey cutlets, baked potatoes, and cabbage steaks
Thursday - chicken ranch salad
Friday - grilled salmon, baked sweet potatoes, steamed broccoli and cauliflower
Saturday - ham and beans with cornbread
Sunday - leftovers

On my 'to do' list...

- Monday - Take a friend shopping, plan the week ahead, do my weekly "home blessing", laundry
- Tuesday - Doctor appointment
- Wednesday - ?
- Thursday - Work (school group)
- Friday - Work (homeschool program)
- Saturday - Work
- Sunday - Church; work in the afternoon (back to summer hours)

In the craft basket...

Nothing at the moment

Looking forward to this week...

Getting some rest and getting things back on track in the area of diet
