Saving Bananas

Molly's Bananas

 This weekend we were blessed with an abundance of fruit among which was lots of bananas. I still freeze bananas whole in their skins and, when it comes time to use them, I just run them under warm water for a moment or two until the skins slide off and viola'! Fresh, white, frozen banana ready for use in smoothies, banana-oat bran muffins, banana-nut bread, banana cake, or whatever...BUT...I just found this link on saving bananas in a different way from Molly over at Econobusters, so I thought I'd share.   1. I used to save them for my sister for banana bread. I never thought of using them in smoothies. Yum! I'll check the link.

  2. One of my favorite ways to make a banana smoothie is to blend one cup of 8th Continent Chocolate Soy Milk (and for best flavor it HAS to be 8th Continent! LOL!), one banana, and a handful of ice. Blend together until smooth, pour into a glass, and enjoy! It TOTALLY takes the place of ice cream at our house! :)

  4. Ratatouille is a great dish, Keri, and we have it quite often...especially in the summer. My son, Tony, makes his by just cutting up and cooking a bunch of vegetables together...usually eggplant, zucchini, yellow squash, tomatoes, onion...whatever is in season or on sale, and spices them up with a little salt, pepper, thyme, and oregano. He serves the cooked vegetables over thick slices of homemade French bread, and tops the whole thing with Parmesan cheese. It's delicious and healthy and it's a great way to use the summer bounty once the garden starts coming on. If you try it...enjoy! :)
