As per request...
SCOTTISH SHORTBREAD
2 sticks butter
1/2 c. powdered sugar
2 c. flour
1/2 tsp. baking powder
1/2 tsp. vanilla
Mix all ingredients together by cutting together until crumbly. Pat into shortbread pan. Bake at 325 degrees for 20 minutes. This is one of my favorites to serve with tea!
I'm definitely going to try this - I've been looking for a good shortbread recipe. Imagine - a Scot getting a shortbread recipe from across the Pond!!

I love shortbread, but I've never made it. Does one need to have a special pan? Is there something that could substitute?
ReplyDeleteI've got a shortbread pan, but I'm guessing you could use anything...a round cake pan should work well (or a square one...8x8"...shaped doesn't matter). It would cook the same, just wouldn't be decorative on top, but there's absolutely nothing wrong with plain, so go for it, Laura! Let me know how you like it. (It's delicious!) :)
