For years we have enjoyed chocolate/banana smoothies. This morning...chocolate/cantaloupe smoothies! Sounds gross I know, but they were actually very good! Per serving...1 cup 8th Continent soy milk (it has to be 8th Continent or it just isn't any good), 1/4 cantaloupe and 1/2 to 3/4 cup ice. Blend together in the blender and serve immediately. Delicious!!!
(Note: If you prefer to try the chocolate/banana smoothies, eliminate the cantaloupe and add a banana instead.)

Mantis In The Garden
I found this HUGE praying mantis while picking green beans in our garden. He was about 4 1/2 inches long. A hefty fellow indeed!

Fresh From The Garden and Hot From The Oven - Margarita Pizza
One of our favorite summer time treats are Margarita pizzas (named after the queen of Spain for whom it was first made), and they're so easy to make! This one is made of tomatoes fresh from my dad's garden, and fresh picked basil from our own garden. To make...first make crust (1 c. warm water, 1 pkg yeast, 1 t. sugar, 1 t. salt, 2 T. olive oil, 2 1/2 c. flour), and spread in a pizza pan that has been drizzled with olive oil. Top with fresh, sliced meaty tomatoes, a handful of chopped, fresh basil leaves, and cheese (normally I use provolone slices, but today I used shredded mozzarella), and bake in a 450 degree oven until cheese is brown and bubbly; enjoy!

Corn! Corn! And More Corn!
Just got done putting another 8 dozen ears of corn in the freezer (that makes a total of about 12 dozen this year). That will sure make for some good eating this winter!
